Gingerbread

I made this amazing gingerbread.
What's so amazing about it, is the taste and the no fuss just do it mentality of the recipe, it was so easy to make!

So this is what you need:
  • 500 grams (deep dark) caster sugar
  • 2 cups of water
  • 1 tbs mixed spice
  • 1 egg
  • 2 tbs honey
  • 500 grams cake flour (or self rising flour or a combination of both)

And this is what you do:

You mix all ingredients in a bowl until stirred and blended nicely and then you grease and flour a baking tin. Put your mix in the tin and put it in a preheated oven, 1 hour at 175 C, will do.

If you decide to make 2 breads, like I did , 50 minutes instead of one hour will be fine.
(But do check with a knitting needle or sate pin to see if everything is done, if the batter doesn't stick to needle when you remove it, your cake will be fine!)

Last tip: If you like to keep your cake fresh and crispy for a longer period of time, you can freeze it. (But first cut  it into some nice slices.)

Bon appetit and tell me what you think!

  1. Karen,
Thank you so much for finding me and in your finding it has led me to your wonderfully creative blog. I also wanted to say Thank you so much for choosing to become a follower, it always honours and humbles me.

I am liking your gingerbread cake. I am loving the molten colour especially.

  2. Hi Karen, I'm glad you enjoyed our Artsy Ants blog! Your recipes look absolutely delicious, I will have to bookmark this Gingerbread one and make it as soon as possible. My husband makes great Banana Bread so maybe this one could become my own specialty.
I'll have to take a look at some more of your posts now!
